I served these at my class last night and several asked for the recipe - so here it is for all to use! I got this from a friend named Beth years ago, so I take no credit for it's amazingness (which isn't a word, but it works here)...
Suzy's Amazing Cookies:
1 stick butter
1/2 cut butter flavored Crisco
3/4 cup brown sugar
3/4 cup white sugar
1 egg
2 teaspoons vanilla
2 3/4 cup flour
1 teaspoon baking soda
1 teaspoon salt
1 cup peanut butter chips
1 cup milk chocolate chips
Mix together butter, crisco and both sugars until well blended. Mix in the egg and vanilla. Mix together the flour, baking soda and salt and add to blended mixture. Add the chocolate chips. Create BIG balls of dough on a cookie sheet (9 per sheet) and bake at 365 degrees for 10 minutes. Open oven and slightly flatten with a spatula and bake for another 2 mins until lightly golden. (I do this step so they stay soft on the inside). Do not overcook - raw insides make for some good cookies!
This was me passing out cookies to students. And no, even though they smelled DELICIOUS and I was starved, I didn't partake (but I did get some spittle on them).

Class was so fun last night! You did an awesome job and I am almost done with my book. I worked on it some more today. Now I think I may need to try those cookies because just one left me really wanting more...... :)

Hi Suzy, it was so nice to finally meet you after stalking you for so long on the internet!.
